That's the omega-3 from the crocodile itself. It means the product is fresh and the fat hasn't been cooked off. It's exactly what you want to see.
Same protein, different format. The chips are thin and crunchy; they break into small training pieces easily. Jerky is chewier. Feet are a long-lasting chew. If your dog is new to croc, chips are the easiest starting point.

Feeding Guidelines
Break into smaller pieces for training or hand over whole as an everyday treat. The chips are thin and crunchy, so they snap easily without crumbling into dust. A few per day suits most dogs depending on size; if your dog is new to crocodile, chips are the easiest way to introduce a novel protein before working up to bigger cuts. As with any treat, keep total daily treats under 10% of your dog's food intake and always provide fresh water.
